Chef’s Background – French Technique Meets Japanese Terroir

Chef Kuniomi Kobayashi began his culinary path in Tokyo at age 18. He honed his craft in France, working under Michelin-starred chefs at Amphitryon (1★), Le Sauternes (2★), and Le Jardin des Sens (3★). But it wasn’t the technique alone that left an impression—it was the unforgettable balance and expression of the beef he tasted there.

Back in Japan, he searched for something that could match that experience and discovered Kumamoto’s Akaushi. Unlike black Wagyu’s intense marbling, Akaushi offered clarity, flavor, and structure—perfect for his style of restrained, logical cooking. French fire technique, Japanese ingredients, and the ability to strip away excess define QUNIOMI’s dishes.
